Happy {Veteran's Day} Weekend


What's everyone up to this weekend?  I'm heading up north to the San Juan Islands for some wine tasting, cabin time, and hot tubbing (while everyone else is out braving the storms on a sailboat).  Make sure to stay toasty during this fall-esque weekend, and remember to thank a veteran for all that they do :)

Where Ya At Matt?


After reading about the mobile food truck Where Ya At Matt? in this month's issue of Seattle magazine, I knew I had to find it and give it a try.  Luckily for us, it parks only a few blocks away from work on Wednesdays, so yesterday David and I walked over to sample their delicious looking po' boys.  We both picked the pork po' boys with Granny Smith apple slaw, grilled onions, and cilantro puree.  The sandwiches were scrumptious (and huge!) and we will definitely be going back soon for their gumbo and jambalaya :)

Boots with the Fur



After eyeing Sorel boots for months, and with some Nordstrom Notes and gift cards burning a hole in my pocket since the summer, I decided it was finally time to make them my own.  I went with the Sorel Tofino for their non-bulky design and warm and fuzzy interior.  Now bring on the snow -  I'm ready!

Restaurant Style Salsa


For Autumn and Ryan's rum party last Saturday I wanted to make a quick but delicious snack that would satisfy a lot of people.  I settled on The Pioneer Woman's Restaurant Style Salsa and couldn't have been happier.  I got so many compliments on this super simple appetizer, and even though it made a full blender of salsa, I still had some leftovers for the next day.  I modified her recipe a little bit, so here's my version (adjust as you see fit!).


Ingredients:
1 28 oz can whole tomatoes with juice
1 10 oz can Rotel (or any brand diced tomatoes with green chilies)
1/4 cup chopped onion
1 clove garlic, minced
1 whole Jalapeno, deseeded and chopped
1/4 tsp sugar
1/4 tsp salt
1/4 tsp cumin
about 1 cup cilantro, chopped
Juice of 1 lime


Instructions:
1.  Combine all ingredients in blender.  Pulse until you get the consistency you like and everything is mixed together.  Taste and adjust as necessary.
2.  Refrigerate for at least 1 hour.  Serve with tortilla chips.

Amanda


Friday night Erika and I drove up north to see Amanda, who was in town for the week from North Carolina.  It had been several years since I had seen her, but she was still the same funny, happy, goofy and kind girl with the most infectious laugh that I remembered.  I've always loved being around Amanda - from our Oregon road trip in high school to her living in my apartment for a few months in 2007, we've always shared many laughs and fun adventures.  It was so great to spend time with her this weekend, and hopefully we can do it again soon in NC!

Happy {red cup} Friday


Christmas is my favorite time of year.  The lights, the carols, the trees - everything about it I just adore.  So imagine my delight when I walked into Starbucks on Tuesday morning to discover that the holiday red cups had arrived!  It instantly brightened my day, and I've been going back a bit more often than usual this week just to see those festive cups (not to mention the delicious pumpkin spice lattes they hold).

Seeing Green


I had been eyeing these AG jeans at Anthropologie since the beginning of summer but couldn't justify the price for something that was so trendy.  A few weeks back, while browsing the website, I stumbled upon the jeans again, this time on sale!  I immediately went down to the store and bought them before they were gone, and I already adore them.  I love how soft they are (they literally feel like stretchy leggings) and the color is versatile enough to get me through almost any season.
