Happy Birthday Lily!


Happy Birthday to this cutest 1 year old!  Lily - I can't believe it's been a whole year since you came into this world and we are all absolutely smitten with you.  You are a sweet, tough little lady who has the best brothers to look up to and I cannot wait to see you again sweet girl!  Happy Birthday, Lil - we all love you so much!

Workin’


LinkedIn is reminding me that today marks 2 years since I started my job!  Honestly, there are days I don't think I'm going to make it, but the past 2 years have flown by and I can't believe I'm here again reflecting on another year of work.  While the days are long and often frustrating, I'm grateful for a flexible schedule that allows me to sneak away to a workout class midday, a team that insists that I take a sick day {or two} when I'm actually sick, and a few great colleagues that I honestly could not get through the day without.  I like my cozy little guestroom/laundry room/office where I can listen to the birds chirping outside my window and watch the seasons change throughout the year, and I'm grateful to be able to still work remotely 4 years after we were all sent home {though sometimes I long for the days of getting out of sweatpants and interacting with more people than just my husband}.  Whatever the future brings, I'm grateful to have a job and grateful for the daily commute across the hall :)  I can't wait to see what this next year will bring!

Orzo al Limone


I've really been trying to get creative in the kitchen this week, trying to use up what we have and avoid going to the grocery store, so the other night when I realized I had everything {or at least, enough substitutions} to make Orzo al Limone from Molly Baz's Cook This Book I knew it was a sign.  This meal came together super quickly and had some delicious flavors from just a few key ingredients.  I'll definitely be coming back to this one when I'm not sure what to make but know I want dinner on the table ASAP.

Orzo al Limone

Ingredients
1 medium yellow onion, chopped {I didn't have this so I used 2 small shallots}
1 lemon
5 Tblsp unsalted butter, divided
3/4 cup grated Parmesan cheese
1 cup orzo
Salt & Pepper
Olive Oil, for drizzling

Instructions
1. Using a vegetable peeler, peel 3 {3inch long} strips of lemon zest from the lemon.
2. In large Dutch oven, heat 3 Tblsp butter over medium heat until melted and foamy.
3. Add onion and cook, stirring often, until softened but not browned, about 5 minutes.
4. Add orzo, the 3 strips lemon zest, and 1 tsp black pepper, and toast, stirring, for 2 minutes.
5. Stir in 3 cups water and 1 tsp salt and bring to a simmer over medium heat.  Once water is simmering, bring heat to medium low and cook, stirring occasionally so orzo doesn't stick to bottom of the pot, until most water has been absorbed, about 8 minutes.
6. Remove from heat and stir in remaining 2 Tblsp butter and Parmesan.
7. Finely grate remaining zest of lemon into pot, then squeeze juice of lemon in as well.  Add salt & pepper to taste, and serve with more Parmesan and olive oil if desired.

Sick Days


While it’s not in my day to day thinking anymore that I might get COVID {though I’m not dumb enough to think it’s never gonna happen}, I certainly didn’t think it would hit me when I was stuck at home alone for 2 weeks without anyone to take care of me. Luckily, I have some pretty amazing friends and family that I certainly couldn’t have done it without. Erika stopped by last week after I asked for some soup and bananas with the above spread which really got me through for the week, and I woke up two separate mornings with emailed gift cards and cash from Mom and Susannah both telling me to order dinner on them. Feeling lonely and sick is not an ideal combination, but with great friends willing to step up and take care of you, it really makes the worst days a little bit better :)

FLiRT


Well, it finally happened. After 4+ years of being a No-vid, the ‘rona finally caught up to me this week and took me out {if you haven't heard, the newest super contagious variant is called FLiRT and is now everywhere}.  After days of intense fatigue, body aches, coughing, fever, headaches, and feeling like I'd never be better, I'm finally turning a corner and can say with utmost certainty I never want to have this again.  I'll still be taking it easy and quarantining at home for the time being {luckily for him and unluckily for me I've been by myself this past week so haven't had to try to avoid passing this along to Christian} and I'm so grateful for my friends and family that have stepped up and dropped off food, sent takeout, and kept checking in to make sure I was still alive {I am!}.  Covid sucks and is not to be messed around with, but if you have to have it make sure you surround yourself with some awesome people who take care of you when you can't do it for yourself.  I guess I'm pretty lucky!

Mother's Day


For Mother's Day on Sunday I drove up bright and early to the valley to celebrate the best mom ever :)  I picked up donuts on the way and we spent the morning trying all of them before heading for a drive out to Anacortes to soak up the beautiful sunshine.  Afterwards we stopped for a few essentials {gin and tonic fixin's per mom's request} then had a delicious dinner of flank steak and Christian's special onions, along with strawberry shortcake for dessert.  Needless to say, we were stuffed by the end of the day but I still managed to stop by and give grandma a Mother's Day hug before heading back south to get ready for the week ahead.  It was a lowkey and sunny holiday and I'm so glad I got to spend it with my mama!
