The Pioneer Woman's Favorite Meatloaf


On New Year's Day I invited my parents and Nana down for dinner to celebrate the beginning of 2012.  I wanted to try something new, and with 3 guinea pigs guests, I decided to make The Pioneer Woman's Favorite Meatloaf that I've been wanting to try ever since I got her cookbook.  I mean, come on people - it's wrapped in bacon.  Enough said.  The prep work was actually a lot quicker than I had anticipated and after shaping the loaf, wrapping it in bacon, and topping it with a yummy ketchup concoction, into the oven it went.  I had to cook mine longer than the recipe says to, so make sure to check the middle to ensure it's cooked all the way through.  The meatloaf was a huge success (and made delicious leftovers the next day).  As my mom said, if Nana ate a whole plateful of food, it had to be good.
