Last weekend I took a trip to my local Farmer's Market to pick up some fresh fruits and veggies. Since summer has officially arrived in Seattle (hello, 80 degrees!), I thought it was the perfect time to start experimenting with different salads to switch up my routine (and try to stay a bit healthy). Here are a few of my favorites so far:
Caprese
Slice up some fresh tomatoes and mozzarella, then layer with basil leaves and drizzle with olive oil, balsamic vinegar and salt and pepper. Simple, quick, and de-li-cious!
Caprese a la Stephanie
Same ingredients as the caprese above (tomato, mozzarella, basil) but mixed up with arugula and avocado, and topped with olive oil and balsamic vinegar (I was extra hungry that night).
Melon, Mint, & Arugula
Chop up some cantaloupe, mozzarella, and red onion, and mix with arugula and fresh mint. Top with balsamic vinegar and olive oil. Fresh melon in a salad is fabulous :)
