Greek Pizza


A few weeks back I discovered a super simple and delicious lunch that I had years ago ripped out of a Real Simple magazine.  These Greek pizzas are so quick and easy to make on my lunchbreak with ingredients I almost always keep on hand, and the salty olives and feta combined with the creamy hummus are the perfect mixture of flavors to keep me full and satisfied all day long.  I suggest picking up these ingredients {if you don't have some combo of them already} to have for those days when you want something that looks and tastes a little fancy but only takes minutes to put together.  You can thank me later :)

Greek Pizzas

Ingredients
1 piece of naan or pita
Olive oil
Hummus
Kalamata olives, sliced in half
Garbanzo beans
Feta, crumbled
Red Onion, sliced
Arugula

Instructions
1. Turn on oven to broil.  Rub olive oil into both sides of naan.  Put on top of foil on baking sheet and place under broiler for about 2 minutes each side, until just crisped, being careful not to burn the bread.
2. Remove naan from oven.  Spread hummus over naan, then top with olives, garbanzo beans, red onion, and feta.  Place under broiler again for about 5 minutes {watching closely} until cheese begins to brown.
3. Top with fresh arugula if using.

Serves 1
