Raspberry Yogurt Ice Pops


When I saw the weather was going to get hot this past weekend, I instantly started looking up popsicle recipes.  Anticipating a popsicle shortage in the city, I wanted to have some on hand to help us cool down, plus I love a chance to use my popsicle mold I bought years ago.  I found this recipe for Raspberry Yogurt Ice Pops on Skinnytaste that uses only 3 ingredients and I knew I had to give them a try.  I used Greek yogurt and combined with the berries it's a pretty tart treat, but you hardly notice when all you're looking for is something cold to bring down the heat.  Feel free to use any seasonal berry or flavored yogurt combo that you love, and in no time you'll be as cool as a cucumber!

Raspberry Yogurt Ice Pops

Ingredients
2 1/2 cups raspberries
3 1/2 Tblsp raw sugar
2 1/2 cups plain regular or Greek yogurt

Instructions
1. Place raspberries in a bowl and slightly mash with fork.
2. Add sugar and set aside about 10 minutes to let the sugar from the berries release.
3. Add yogurt and stir together.
4. Divide mixture evenly into popsicle molds or disposable plastic cups.  Insert the sticks and freeze until solid, at least 6 hours.

Serves 10 {note I about halved this recipe which was perfect for my 6 popsicle mold}

Hot Hot HOT Weekend


It's a toasty one here in the Pacific Northwest, with temps in our 'hood getting up to 105 yesterday {for anyone from warmer climates making fun of us, note that almost no one here has a/c and we are not equipped for this!}!  I am extremely lucky that Christian has air conditioning so I've been camped out at his house since Friday, trying to stay cool and beat the heat.  We've managed to survive so far by running lots of errands in air conditioned stores, eating popsicles, and finding bits of shade wherever we can.  The 80 degree temps cannot come soon enough and I hope everyone is finding ways to cool down and stay sane.  Here are a few pics from our weekend - stay safe everyone!

Happy Anniversary Mom & Dad!

Summer To Do


With the temps getting up in the 100's here in Seattle this weekend {whaaaaa?!?!?} and the official start of summer earlier this week, not to mention a pandemic that kept us close to home for the past 16+ months, I'm getting antsy to start doing things, seeing people, and going places again.  Without further ado, here is my 2021 Summer To Do List that I can't wait to get started on.  Who's with me?

1. Slurp oysters while overlooking the bay 
3. Pick up ice cream on our after dinner walks around the neighborhood
4. Explore the San Juan Islands
5. Drink coffee on my back patio on sunny mornings
6. Dine out at some of the new & old outdoor restaurants in the city
7. Use our Discover Pass
8. Pierce my ears {again}
9. Take some much needed time off of work, even if it just means a staycation
10. Make popsicles
11. Wine taste in Woodinville
12. Find a new gym {that isn't my living room}
13. Workout outside {on the rooftop or with a class}
14. Take the Diana out again after a long hiatus
15. See friends!  Whether it's a rooftop bbq, a backyard picnic, or a brewery get together, I miss them and cannot wait to hug them :)

Happy Retirement Dad! {Part III}


The big outing for Dad's retirement week celebration was a trip to the zoo!  Jack had never been to Woodland Park Zoo and since they were over on this side of the mountains we knew we had to take him.  Sunday morning we woke up bright and early to pouring down rain but we didn't let that stop us from layering up and heading out.  We actually lucked out with the weather {considering before and after our visit were monsoon-like conditions} and Jack had the best time checking out as many animals as he could {as you can see above from the end of our visit, he was one tired little fella!}.  It was such a fun trip that went by way too fast and I can't wait for the next one!

Father's Day


Sunday morning, anticipating a gorgeous first day of summer, we decided to head north and spend Father's Day with the family.  We made a quick trip out to the beach to say hi to Gram & Gramps {and have strawberry shortcake}, then headed out to the marina to spend the afternoon on dad's boat.  There were a few issues with the motor/gas/something, so instead of heading out on the open water we just chilled in the marina, eating snacks and enjoying the glorious {and hot!} sunshine.  We wandered around looking at other boats for a bit, then ultimately made our way back to my parent's before the long drive back to the city.  It was a quick trip up north, but one I'm so happy we made!
