Happy Friday Eve!


Happy Friday Eve!  I'm taking tomorrow off to get our taxes done {bleh} but am so happy to finally see the sun shining - I fully plan to take advantage by going on walks and soaking it up as much as I can this weekend. Cheers to it almost feeling like spring!

Spicy Ground Chicken Stir Fry


A few weeks back I was craving stir fry and after a little searching found this recipe for Spicy Ground Chicken Stir Fry that looked perfect for a weeknight meal. The dinner comes together super quickly and you can use whatever veggies you have on hand, and served over some rice it was exactly what I was craving - I’ll definitely be making this one again!


Spicy Ground Chicken Stir Fry

Ingredients
2 Tblsp olive oil, divided
1 lb ground chicken
1/2 medium onion
6 oz snow peas
1 bell pepper
2 cups broccoli florets {I substituted mushrooms & zucchini instead}
1/2 cup thinly sliced carrots
3/4 cups cashews {if desired}
Rice, for serving

Sauce
1/2 cup chicken broth or water
3 Tblsp hoisin sauce
2 Tblsp sriracha
2 Tblsp soy sauce
1/2 tsp apple cider vinegar or rice vinegar
1 Tblsp brown sugar
1 Tblsp cornstarch
1 tsp ginger
3 cloves garlic, minced
1/2 tsp crushed red pepper flakes

Instructions
1. Prep all ingredients - make sure veggies are cut into similar sizes so they cook at the same rate.
2. Whisk together all sauce ingredients in a bowl.
3. Add 1 Tblsp olive oil and ground chicken to large skillet over medium-high heat.  Cook until chicken is cooked through, breaking up as you go.  Transfer to a plate.
4. Add remaining oil to skillet with onion.  Cook about 1 minute.
5. Add more oil if needed, then add remaining veggies and cook until they are the desired crispness.
6. Add cashews if using, along with the cooked chicken.  Pour sauce over everything, let it bubble, and stir over mixture until warmed through and everything is coated.
7. Serve over rice

Serves 4

February Date Night {Lupo}


For February's Date Night we decided to try out Lupo a few weekends back, a new-ish pizza place in Fremont I'd been dying to try {and C never says no to yummy pizza}.  We got there right as they were opening since it's a small space and we didn't have reservations and luckily got a seat at a tiny table near the bar and the pizza oven.  We ordered cocktails that were teenie but yummy, a caesar salad to share, and two pizzas, the Sausage and the Cacio e Pepe with Guanciale, which both had incredibly unique and delicious flavors.  The pizza was exceptional {C put it right below Bar del Corso and above Delancey} and it was the perfect cozy date night spot that I know we'll be back to.

Happy Friday!


Happy Friday!  While it's supposed to be rainy and icky this weekend, I'm taking it as an excuse to do all the boring paperwork stuff {ew taxes} before the sunshine and warmth {dare we say 60?} arrive next week!  I am so ready for some warmer and sunny days. Have a great weekend!

Backyard Bagels


A few weekends ago we had an early Saturday appointment so I decided it was the perfect time to stop into Backyard Bagels, a place I’d been dying to try but never want to get ready and head out early to on a weekend. We got there right as they were opening and there was already a line out the door. After a little debate we decided to share the Ballard Lox sandwich on a jalapeño cheddar bagel and get half a dozen various bagels to take home and freeze. We brought everything home for breakfast and we both agreed the sandwich we shared was pretty amazing. All of the bagels we eventually ate over the week were delish {my faves were the everything and that jalapeño cheddar but be warned - there are giant slices of jalapeño on it and it definitely has a kick!} and I’m loving that Seattle is having a bagel moment. I can’t wait to go try some more!

Valentine's Day


In what is becoming a tradition, I told Christian that once again I didn't want a card or flowers for Valentine's Day - just a midday walk for donuts to which he happily obliged.  I love that this is our 8th Valentine's Day together and we never stray too far from our faves - a sweet treat, yummy takeout {this time from Un Bien}, and a cozy night on the couch with some current shows.  I love spending my days with this guy and even better when we get an actual excuse to celebrate us.

Other Coast Cafe


Last month I scheduled my oil change in Ballard during lunch time so I could take myself out to lunch - something I never do anymore since I work from home.  I decided to head to The Other Coast Cafe, a Ballard sandwich shop that I hadn't been to in years but had recently been popping up for me online.  I settled on their best seller, the Rajun Cajun, and I can honestly say it was one of the best things I've had in a long time.  The mix of turkey, cheese, and spicy mayo crisped up and melted was the most perfect thing to eat on a chilly and dreary January day.  At $15 plus tax it's not something I'm going to go get everyday, but I'm not against scheduling my next Ballard appointment around lunchtime so I can snag another :)
