For Christian's bday in November, I was having the hardest time thinking of what to get him until Erika suggested a cooking class. I'm obsessed with The Pantry classes {see previous classes here and here}, and lucky for me they were coming out with their winter series just a few days before his bday. I picked Winter Farmer's Market, which I then realized was a vegetarian class, but when he mentioned that he would like to eat a little less meat, I knew I had chosen well. Last Friday was our class, and after a quick happy hour we arrived at The Pantry ready to learn and eat. Our teacher Ari was so cool and as a food science nerd she guided us through not only how to cook and bake things, but why we do it the way we do. There was a lot of chopping, a lot of peeling, and a lot of mixing as we sipped our wine and got to know the nice folks around us. One of my favorite things about The Pantry, besides the awesome teachers, amazing food, and intimate setting, is how applicable the teachings are and how accessible they make cooking these delicious things. In the end we ended up with Cauliflower & Sunchoke Fritters with Onion Sofrito {OMG, delicious}, Leek & Squash Risotto {stirred constantly by yours truly}, Winter Greens with Roasted Beets & Tahini-Date Vinaigrette, and a super dense and delicious Apple & Olive Oil Cake, that I didn't think I'd be able to finish but I couldn't stop eating {it would be amazing with coffee in the morning}. I'm pretty sure my date was extremely impressed with my class choice and all the fun things we learned, and we're already plotting our next trip to The Pantry to see what else we can
