Gray Skies, Goodbye


We're saying goodbye {I hope} to gloomy gray skies and hello to sunshine as we head south for the winter {or at least a week} to see my parents in AZ!  I'm excited to check out the new house, soak up the sunshine, and change up the scenery a bit as we get out of town.  Cheers to the flexibility of working remotely!

Goodbye House


One of the crazy things that happened over the past few weeks that kind of got lost in the shuffle of the rest of the craziness that has been 2024 is that I SOLD MY HOUSE.  It feels surreal even to type that out.  I had known this day was coming for awhile - the landlord life was not for me, and it felt like enough time had passed from living in that little house that I could say goodbye to it and not have a total breakdown.  The stars aligned and I received an off-market offer {hours before plans were to be put in motion to get her ready for the market} that I just could not say no to.  Who knows if I could've made a few thousand more dollars having put it on the market, but with the stress of having to put a lot of money and effort into making it sellable vs. selling it as is for a really decent price, I knew in my gut that this was the way to go.  The sale went through so quickly and I was lucky enough to have help in the form of Mom, Dad, and Christian to help me get the remaining items out of my shed {and to steal a plant or two from that beautiful garden}.  A few hours before the sale closed, C and I headed over one last time to drop off the keys and say goodbye to the house that meant so much to me over the past 10+ years. People keep asking how I feel about selling my first home and it's hard to put into words.  I am beyond grateful that I was able to call the little yellow cottage home for so long - she and I went through a lot over the years - but I also feel really happy with the decision and relieved that I have one less anxiety hovering in my thoughts every day.  I'm excited to one day put that money into a home that Christian and I can build together, and in the meantime I'm grateful that I have a warm, cozy, loving place that I can call home and the most wonderful family that helped make the yellow house a home for so long and helped give her a proper goodbye.  I'm incredibly lucky :)

Happy Friday!


Happy Friday! We had a nice quiet Valentines Day at home - I told C instead of flowers all I wanted was a donut {or 2} and of course, he obliged! I love these quiet holidays and the simple joys they bring - here’s to more simple pleasures this weekend!

Chicken Larb Bowls


I've had my eye on these Chicken Larb Bowls from What's Gaby Cooking for quite some time, so I finally decided to make them a couple months back and boy were they delicious.  It's one of those recipes that is deceptively simple that I was kicking myself for not trying it sooner.  I'd highly recommend going the extra mile to make the coconut rice instead of plain rice, and if you have the room I'd double the recipe for the chicken, as it was so good we didn't have nearly enough leftovers the next day.  Enjoy!

Chicken Larb Bowls

Ingredients
Quick Pickles
2 Persian cucumbers, thinly sliced
1/2 red onion thinly sliced
2 Tblsp rice vinegar

Chicken
1 Tblsp vegetable oil
1 bunch kale deveined and chopped
1 lb ground chicken
2-3 cloves garlic finely chopped
6 scallions, white and light green parts, thinly sliced
3 Tblsp soy sauce
1 to 2 tablespoons sambal oelek or sriracha, depending on how spicy you want it
1 Tblsp brown sugar

Rice
2 cups water
1 cup coconut milk
1 tsp sugar
1 tsp salt
2 cups jasmine rice
zest & juice of 1 lime

Garnish
Fresh mint leaves
Fresh basil leaves
Fresh cilantro leaves

1. Quick pickles: In a small bowl, toss together the cucumbers, red onion, and vinegar. Set aside to marinate while you cook the chicken.
2. Chicken: In a large, heavy-bottomed skillet, heat the oil over medium-high heat. Add the kale and cook until wilted, 5 to 6 minutes. Season with salt and carefully transfer to a medium bowl.
3. Add the ground chicken to the same skillet and cook, breaking it apart with the back of a wooden spoon and stirring frequently until no pink remains, 8 to 10 minutes.
4. Add the garlic and scallions and cook for 1 minute, or until fragrant. Add the soy sauce, sambal oelek, and brown sugar and stir to combine. Return the cooked kale to the skillet and stir to combine. Season with salt and reduce the heat to low until ready to serve.
5. Rice: Meanwhile, combine the water, coconut milk, sugar, and salt in a medium saucepan and heat over medium-high heat until the mixture starts to simmer. Add the rice and bring back to a low simmer. Cover the pot, reduce the heat to low, and cook undisturbed for about 15 minutes, until all the liquid has been absorbed.
6. Turn off the heat and let the rice steam for another 5 to 10 minutes, until fully cooked and soft. Uncover, fluff, and toss in the lime zest and juice.
7. To serve, add rice to individual bowls.  Top with chicken mixture, quick pickles, and lots of fresh herbs.

A Sad Farewell


Last week we said our goodbyes to Grandpa and while it was sad and hard, we were able to see so many friends and family throughout the weekend while we celebrated such a wonderful man.  We started out Saturday evening with the SVC Athletic Auction where we raised money for student athletes and listened to my dad & Nancy give beautiful tributes to the "Original Cardinal", my grandpa.  Sunday we had dinner with the whole family at Marsha's house, which was cozy and comforting to get to see everyone.  Monday was the memorial, with a family service at the graveside then a giant memorial at the college {with close to 600 people in attendance} to pay tribute to this legend.  The stories we were told while mingling with the guests really drove home what a wonderful, important, and caring man my Grandpa was and we left the valley with a sense of peace knowing that we celebrated our Grandpa in a way that would've made him proud.  Here are a few pics from the weekend:

Happy Friday


Happy Friday, Happy February, Happy all of the things.  It's been a rough start to the year but I'm hoping with a new month things will start to turn around.  This weekend I'll be spending some much needed time with the family celebrating the man we all love so much and while it's a sad occasion, I'm grateful that we can all be together to honor him.  Have a great weekend, and hug the ones you love tight!
