The Stew


If you haven't heard of "The Stew", the Spiced Chickpea Stew with Coconut and Turmeric that is alllll over social media and the internet, it's time you learned.  I see it everywhere, from food bloggers I follow to mainstream news outlets, and everyone is asking what makes this simple dish from New York Times Cooking so special.  Well, start with the fact that it is made up of almost entirely pantry ingredients you can always have on hand {minus the toppings}, it is also so easy to toss together and simmer and is totally flavorful and soul-satisfying on these cold winter days when all you want is to curl up on the couch with a big steaming bowl of soup and some good Netflix.  I made this a few weeks back and it definitely lived up to the hype - it was such a cozy and easy meal for a cold Sunday night that I instantly went and bought some more chickpeas and coconut milk just so I can have them on hand for these winter days when I  need something warm.  If you haven't yet given it a try, I'd highly recommend doing it soon before the weather starts getting warmer and the days longer {it's gonna happen soon, right?  Right?!?!}.

Spiced Chickpea Stew with Coconut and Turmeric

Ingredients
1/4 cup olive oil
4 garlic cloves, chopped
1 large yellow onion, chopped
1 {2 inch} piece of ginger, finely chopped
Salt & Pepper
1 1/2 tsp ground turmeric
1 tsp red pepper flakes
2- 15oz cans chickpeas, rinsed and drained
2- 15oz cans full-fat coconut milk
2 cups vegetable or chicken stock
1 bunch Swiss chard, kale, or collard greens, stems removed and leaves torn to bite sized pieces
1 cup mint leaves, for serving
Greek yogurt {optional} for serving
Toasted Pita for serving

Instructions
1. Heat oil in large pot over medium heat.  Add garlic, onion, and ginger.  Season with salt and pepper and cook, stirring occasionally until onion is translucent and starts to brown a little around the edges, about 5 minutes.
2. Add turmeric, red pepper flakes, and chickpeas, and season with salt and pepper.  Cook, stirring frequently, so chickpeas sizzle and fry a bit in the spices and oil, until they start to break down and get a little browned and crisp, about 10 minutes.  Remove about 1 cup chickpeas and set aside for garnish.
3. Using wooden spoon, further crush remaining chickpeas slightly to release their starchy insides {this helps to thicken the stew}.  Add coconut milk and stock to pot and season with salt and pepper.  Bring to a simmer, scraping up any bits that have formed on bottom of the pot.  Cook, stirring occasionally, until stew has thickened and flavors have started to come together, about 30 minutes {taste a chickpea to check they have simmered long enough and are delicious}.  
4. Add greens and stir, making sure they are submerged in liquid.  Cook a few minutes so they wilt and soften, 3-7 minutes depending on what you're using {Swiss chard and spinach will wilt faster than kale or collard greens}.  Season again with salt and pepper.
5. Divide among bowls and top with mint, reserved chickpeas, yogurt and pita.  Add drizzle of olive oil and red pepper flakes if desired

Serves 4 to 6

Fave Books of 2018

Even though I have a super long commute for only having to go a few miles, the one thing I absolutely love about my time on the bus is having dedicated reading time.  I love nothing more than getting sucked into a great book and it makes the sometimes hour long commute {each way!} go surprisingly fast when I'm well into a favorite.  Since I finished 22 books last year {and am hoping to do even more this year!}, I thought I'd share a few of my faves that I just couldn't put down.  And if you have recommendations for my next ones, I'm all ears!



I love everything Fredrik Backman writes, but Beartown may just be my favorite.  Beartown is a small town in the heart of Sweden that lives and breathes hockey, but when a horrible crime rocks the community, their love of the sport and where their loyalty lies is truly tested.  Oh, and make sure not to miss the equally awesome sequel, Us Against You.



I read Commonwealth because a friend left it at my house, but it ended up being one of my absolute favorites.  It was one of those rare books that I never wanted to end, as I felt like I knew the characters and was part of their family after going through decades of family drama and everyday life with them.  It shows how a chance and seemingly innocent encounter can change and intertwine lives throughout the course of a lifetime, and is so beautifully written I couldn't put it down.



I've been recommending The Immortalists to anyone who asks ever since I finished this touching book that poses the question If you knew the date of your death, how would you live your life?  It begins in the late 60's when 4 children visit a traveling psychic who predicts the exact date they will each die.  The book then weaves these 4 stories throughout the decades, where you invest in each of their lives and find out if what the psychic said was true.  It's such an intriguing and heart wrenching book that is definitely one of my all time faves.



Susannah recommended Life After Life a long time ago, and when it didn't have a waitlist at the library, I decided to finally give it a go.  The concept is so intriguing - one woman who lives different events of her life over and over while making tiny changes to her actions and perhaps changing the course of world history.  It's hard to explain {and it's nothing like Groundhogs Day, don't worry} but trust me when I say this one is great.  And if you love it, try the next book in the series, A God in Ruins.

Detox Moroccan-Spiced Chickpea Glow Bowl


I came across this recipe for Detox Moroccan-Spiced Chickpea Glow Bowl from one of my favorite food bloggers, Pinch of Yum, and it seemed like the perfect flavorful meal to whip together on one of those nights where I needed something good for me but didn't want to spend a ton of time.  You can customize these bowls to whatever Mediterranean inspired ingredients you have or just what sounds delicious at the time - she even suggests putting everything in a tortilla and eating as a burrito!  The flavors in this one were so good and it's an easy pantry meal to whip up on those busy weeknights when Taco Time is just too far away :)

Detox Moroccan-Spiced Chickpea Glow Bowl

Ingredients

For Moroccan-Spiced Chickpeas
1 Tblsp olive oil
1/4 cup chopped onion
1 garlic clove, minced
1 Tblsp cumin
1 Tblsp chili powder
1 tsp turmeric
1 tsp garam masala
1 tsp sea salt
Dash each of cinnamon and cayenne
2- 14oz can chickpeas, rinsed and drained
2- 14oz cans fire roasted tomatoes

For Bowls
Cucumbers
Couscous
Mint, Parsley, or Cilantro
Yogurt or hummus
Olive oil
Lemon juice
Toasted pita wedges

Instructions
1. Heat olive oil in skillet over medium heat.  Add onion and cook until soft.  Add garlic, spices, salt, and chickpeas and stir until very fragrant.  Add tomatoes, undrained, and simmer for 20 minutes while you prep the rest of the ingredients.
2. Chop cucumbers, cook couscous, and mince the fresh herbs.  Arrange bowls with whatever ingredients you like, then top with cooked chickpea mixture.  Enjoy!

Serves 6 {but is easy to cut in half}

Snuggly Weekend


How was your weekend?  We had high hopes to do a lot and venture out and about, but after it took me forever to get home Friday night {damn that Seattle traffic!} and Nina ended up having some tummy troubles, we decided to take it easy and just chill.  We cooked yummy food at home, watched both Fyre Festival documentaries {would recommend both, but Hulu's was definitely the fave}, ran a few errands nearby, took Nina for some good walks, and had a nice cozy dinner Sunday night at my house with the parents.  Even though it was really quiet, it's nice to be forced to just sit back and relax, especially after weeks of feeling sicky.  We're finally on the mend and it's feeling really good :)

Happy Friday!


Happy Friday!  Doesn't it feel like January has been going on forever?  Christmas feels like months ago and I can't believe we still have another week left until February.  Thankfully, it's supposed to be another beautiful weekend here in Seattle so I'm hoping to say adios to these colds and hello to some long walks with Nina, finally seeing Christian again, and maybe a date night thrown in for good measure.  Hope you have a great weekend!

Josh & Blanche


Earlier this week I headed just a few blocks up the hill from work to hang out with Josh and his little doodle, Blanche.  They live so close to my office - just one of the many awesome perks of switching jobs :)  We started out at Josh's new apartment for cocktails and catching up before heading up the road for dinner and drinks at Corvus & Co, one of those cute Capitol Hill neighborhood spots that make you wish you lived up there so you could pop in to this dark and cozy bar any night of the week.  We filled up on the yummy Mediterranean food and Old Fashioned's while catching up on each others lives and making plans to meet up again in the very near future.  I love the times I get to spend with Josh, and now that I know he's just a few blocks away from work I know there will be many more evenings just like this where I get to cozy up to one of my oldest and dearest friends.

Lemony Garlic Chicken and Orzo Soup


Is anyone in your house suffering from this gross cold going around?  Both Christian and I got different versions of it, so this past weekend I decided to make us something that I hoped would instantly make us feel better.  On Half Baked Harvest I came across her Lemony Garlic Chicken and Orzo Soup and I figured it couldn't make us feel any worse, and she hasn't disappointed me yet with her delicious recipes.  It was a super easy soup to put together on Sunday afternoon and it made my house smell divine.  I dropped off several servings to C's house that night and he agreed that it was one of the best things we've had in awhile {don't mind the terrible quality pics - this soup was goooood}.  Even though we couldn't enjoy it together {ew, germs} it was still the perfect "make you feel better" soup that I'd highly recommend for colds or just to warm you up on these cold January days {and check our her website for how to adapt to the slow cooker!}.  Enjoy!

Lemony Garlic Chicken and Orzo Soup

Ingredients
2 chicken breasts {about 1 lb}
Salt & Pepper
1/4 cup olive oil
8-12 large cloves garlic, peeled and smashed
6 carrots, chopped
1 Tblsp fresh sage
1 Tblsp fresh thyme
8 cups low sodium chicken broth
1 bay leaf
1 Parmesan rind, plus grated Parmesan for serving
1 pinch crushed red pepper flakes
1 bunch Tuscan kale, roughly chopped
1 Tblsp fresh chopped dill, plus more for serving
juice of 2 lemons {I used 1 1/2 because my lemons were huge}
1 lb orzo pasta

Instructions
1. Season chicken all over with salt and pepper.
2. In large pot, heat oil over high heat.  When heated, add chicken and sear until golden brown on both sides, about 5 minutes per side.  Reduce heat to low, add smashed garlic cloves and cook another 5 minutes until golden and fragrant.  Add carrots, sage, thyme, and pinch each of salt and pepper.  Cook another 5 minutes.  Add broth, bay leaf, Parmesan rind, and pinch of red pepper flakes.  Simmer over medium heat for 20-30 minutes.
3. Remove chicken and shred.  Stir in kale, dill, and lemon juice into soup and cook another 5 minutes.  Remove Parmesan rind and bay leaf and discard.  Stir back in shredded chicken and season with salt and pepper if desired.
4. Meanwhile, cook orzo as directed until al dente.  Drain.
5. Divide orzo among bowls and pour soup over top.  Top each bowl with more fresh dill and Parmesan.

Serves 5-6

Blood Moon Weekend


Hello!  How was your long weekend?  We've both been fighting colds over here so besides a few quick check-ins with C, I've spent most of the weekend at home, running errands, and trying to clean dog hair off of everything :)  Sunday night I stepped outside to see the gorgeous Blood Moon {thanks for the reminder, brother} and even though it was freezing out, I tried to snap a few very far away pictures of that eerie orange moon.  Besides this stupid lingering cough, I'm feeling refreshed and ready for a new {short} week and hopeful that these colds go away asap.  Happy Tuesday!

Nina Sick Day


I stayed home from work yesterday {damn you, cold and flu season} and though I couldn't do much, I did have Ms. Nina with me to snuggle and watch tv - and she didn't even mind all the coughing throughout the day.  I love this little love bug so much and even though she takes up 3/4 of the bed, whines when she doesn't get enough treats, and loves not to listen when I tell her it's time to come inside, her cuddles and sweet kisses totally make up for it and I'm glad I had her around this week.  Here are a few pics from our last few days together - I mean, does anyone look cuter sleeping than her?

Bathtub Gin & Co


Saturday night, after taking in the quiet viaduct, we had about an hour to kill before dinner so we headed over to Bathtub Gin & Company, a place I rarely go to anymore but used to be one of my faves back when the old work crew used to go out regularly for happy hour.  Christian had never been to this still hoppin' spot in an alley in Belltown and we were lucky enough to grab the last two seats in the whole place at the bar upstairs.  We settled in and after some recommendations from the bartender proceed to sip on some delicious cocktails while people-watching and making plans for the rest of the weekend.  Though I rarely find myself in Belltown anymore and I'm not going out after work as much as I used to, Bathtub Gin & Co will always have a special place in my heart and I'm happy to see that as so many of my old faves are closing down, this one is still going strong.  Cheers!

Red Wine Cranberry Braised Short Ribs


You're probably wondering what that delicious New Year's Eve home-cooked dinner was.  This recipe for Red Wine Cranberry Braised Short Ribs from Half Baked Harvest showed up on my Instagram feed a few months back and I knew that I just had to find a special occasion to make it.  Since we had decided to stay in for New Year's Eve, I decided this fancy yet easy dinner would be perfect for us to put together since I had to work that day and wouldn't have a ton of prep time.  Short ribs, as it turns out, are expensive, but we figured it was still cheaper than going out, and anytime I can eat something delicious while still in my sweatpants, I'm all in.  Besides searing the ribs and chopping a few veggies, the prep for this dinner couldn't have been easier, and paired with some craft cocktails and Christian's delicious mashed potatoes {his secret?  toasted sesame oil and they're amazing!} this was such a perfect meal to ring in 2019.  If you're looking for something that will really impress {but won't take too much effort}, look no further!

Red Wine Cranberry Braised Short Ribs

Ingredients
4-5 lbs bone-in, beef short ribs
Salt & Pepper
2 Tblsp extra virgin olive oil
1 medium yellow onion, thinly sliced
2 shallots, thinly sliced
4 carrots, chopped
2 cups dry red wine, such as Cabernet Sauvignon
2 cups low sodium beef broth
2 Tblsp tomato paste
1 Tblsp brown sugar or honey
4 sprigs fresh thyme
2 sprigs fresh rosemary
2 bay leaves
2 cups fresh cranberries
Mashed potatoes, for serving

Instructions
1. Season short ribs with salt and pepper.  Heat the olive oil in large skillet, searing the ribs on both sides.  Remove ribs and transfer to slow cooker.
2. To the slow cooker add onion, shallots, carrots, wine, broth, tomato paste, brown sugar, thyme, rosemary, and bay leaves.  Season with salt and pepper and gently stir to combine.  Cover and cook on low for 6-8 hours.  During last 2 hours of cooking, add cranberries.
3. Remove thyme, rosemary, and bay leaves.  Serve ribs over a bed of mashed potatoes and drizzle with the pan sauce.

Serves 6

Baby Baby Baby


This past weekend the gang got together for some pizza, beer, and baby snuggles at Erika's.  It had been quite awhile since Merith, Susannah, Erika, Josh, myself, and all of our respective others were all in the same place so we took advantage with an afternoon hang, which was probably even more fun for the kiddos than the adults.  These little ones above {Ellowyn, Charlie, and Theia} were all born so close to each other and are just the cutest of friends, while their older siblings {Addie & Linnea} were running and dancing around way too much to stop for a picture :).  It was so fun to catch up with everyone, and looking outside at the bright sunshine streaming through the windows made me even more excited for these get togethers in the summer where we can play outside and soak it all in.  Thanks for hosting all these crazy kids, Erika, and thanks for the cupcakes, Josh!

Goodbye Viaduct


Today is day 1 of ViaDoom, the Seattle Squeeze, Maximum Constraint.....whatever you want to call it.  Basically, it's traffic hell in Seattle for the foreseeable future and the first phase is the closing of the Alaskan Way Viaduct last Friday.  Saturday night we found ourselves down at the Market for dinner so we decided to take a glimpse of the viaduct and it was sooooo eerily quiet without the usual noise of thousands of cars zooming past.  It almost made you want to go out there and do a little dance out in the middle of that abandoned road that, while ugly, had the most beautiful views of the waterfront and the city.  While I'm not sure it'll be all that missed, it is the end of an era in the city and I'm glad we got to see it one last time before it's torn down and the new wave of construction begins.  In the meantime, if you need me, most likely I'll be sitting on the bus trying to get somewhere in this crazy traffic :)

Nina and the Kitties


My biggest fear going up north for Christmas was Nina and the cats.  Specifically, that one would eat the other {though I'm not sure who would eat who :)}.  I guess you could say it went better than expected - all 3 survived!  The first few days were a little rough, with Simba hissing at Nina whenever she tried to walk by him - he even cornered her at one point and our poor puppy was left whining in the basement until one of us found her!  Shadow was mostly intrigued by Nina and kept following her around trying to sniff her tail and get closer and closer.  Nina's way of dealing with the cats?  She wouldn't look either cat in the eye whenever they got too close - I think it was her way of pretending they weren't there!  :) I think had Simba not been around, Nina and Shadow would've ended up great friends :)  By the end of the trip we were able to leave the 3 alone at home for extended periods of time and I think if we had stayed a few more days, there definitely would've been some snuggling going on.  Though Nina was royally exhausted by the time we got home on Christmas night, I'm pretty sure she had a great time with the kitties and I know she's excited to go back real soon :)

Christmas {Part II}


After those Christmas Eve naps we changed out of our loungewear and headed down to Ed and Marsha's for some Christmas Eve rice pudding and family time.  We snapped our annual family Christmas picture in front of the tree before saying goodbye to Shaun and Sara who headed back over the mountains for the rest of the holiday.  After dinner we headed back up to Mom & Dad's where we made Nina do a photoshoot with us in front of the tree, then we settled in to watch some Bloodline on Netflix {have you watched?  So good!}.  Christmas morning we headed out to the island, where I neglected to take any pictures {whoops!} but we spent the morning eating our traditional breakfast casserole, scratching lotto tickets {big $7 winner over here!}, and having some quality time with the family.  Next up was Christmas dinner at Mom and Dad's {gotta love those holiday dishes and cheesy potatoes!} before it was time to pack up and head back to the city and the real world {the only bad part about changing jobs - no vacation time!}.  It was such a great weekend with my family and I'm so thankful Christian and Nina were able to be a part of it.  Can't wait for next year!
