Here's another great one from What to Cook When You Don't Feel Like Cooking that comes together super quickly and has excellent flavors. These One-Pan Al Pastor Enchiladas taste delicious with the addition of the canned pineapple and since I've already made them several times {including last night} and have gotten rave reviews from my tester of one, I know I'll be making them again and again as a simple but delicious weeknight meal. No chopping, minimal dishes, and full of flavor? Count me in!
Ingredients
1 lb ground pork
1 tsp garlic powder
1 tsp chili powder
1 tsp cumin
1 tsp oregano
1 tsp salt
5oz spinach, chopped or torn to small pieces
16oz jar salsa verde
1 cup crushed pineapple {from a can or fresh}
1- 10inch flour tortillas
2 cups shredded pepper Jack cheese
Red onion, avocado, cilantro, sour cream, etc for topping
Instructions
1. Preheat oven to 400.
2. Warm 12 inch oven proof skillet over medium high heat. Add pork to the pan and cook, breaking up with wooden spoon into small crumbles until barely any pink remains. Add garlic powder, chili powder, cumin, oregano, and salt and cook until pork is cooked all the way through.
3. Add in spinach, 1/4 cup salsa verde, and the pineapple and cook until meat has absorbed the sauce for a few minutes {if I’m using canned pineapple I’ll add a few teaspoons of the juice as well}. Turn off heat.
4. Lay tortillas on clean surface. Spoon about 1/2 cup pork mixture down center of each tortilla. Top filling with about 2 Tblsp cheese, roll up tightly, and lay seamside down on a cutting board.
5. Pour half cup of salsa verde into the same skillet {no need to clean it out}. Add enchiladas, seam side down, however they fit in the skillet. Top with remaining salsa verde and cheese.
6. Bake 15 minutes, or until cheese has completely melted. Serve with desired toppings.
