Happy Anniversary Mom & Dad!

June Date Night {Sunny Hill}


June's Date Night was a few weeks back on a sunny Friday afternoon where we knew we had to get out and find a patio ASAP.  We had to run some errands in the Crown Hill area so we decided to head to Sunny Hill for dinner, one of our faves when the weather is nice that serves yummy food and thirst quenching drinks.  Luckily we were able to snag a table on their back patio {the front is fun but when the sun comes out it is way too hot there} and we were able to relax, enjoy the warm evening, and eat some delicious food that always hits the spot.  I love a spontaneous date night with my fella, especially when we can get outside and enjoy the beginning of summer!

An Afternoon in Woodinville


Thursday we both had the day off for Juneteenth so we decided to head over to Woodinville to run a few errands and enjoy the sunny day.  We started off at the park, wandering over to The Schoolhouse District where everything was closed up but looked like a fun place to taste wine and have a yummy meal.  After driving around a bit we stopped in at the Hollywood Tavern for lunch where we snagged a table outside and enjoyed a yummy meal before heading over to Costco to spend all of our paychecks {kidding, kind of}.  Though we hit a bunch of traffic on our way home it was fun to get out of the city on a weekday and explore some new to us parts of Woodinville.

Ginger Garlic Shrimp with Coconut Milk


A few weeks back I was looking for something new and easy to make for a weeknight dinner and stumbled upon the New York Time's Ginger Garlic Shrimp with Coconut Milk that looked like it would be easy peasy to put together.  I marinated the shrimp in the afternoon so the flavors could really get absorbed and instead of adding the chiles at the end as a topping, I cooked them with the shrimp and coconut milk to soften them and give it a bit more flavor {highly recommend doing this}.  It was a super simple and yummy weeknight meal that I'll definitely be making again!

Ginger Garlic Shrimp with Coconut Milk

Ingredients
2 large garlic cloves, minced
1 tsp ginger, minced
1 tsp ground turmeric
salt & pepper
1 Tblsp olive oil
1 lb large shrimp, peeled, deveined, and tails removed
2 Tblsp vegetable oil
1-14oz can full fat coconut milk
1 Tblsp soy sauce
3 cups packed baby spinach
Juice of 1 lime
1 fresno, jalapeno or serrano chile, thinly sliced {I used a jalapeno but could've used 2}
2 green onions, white and light green parts thinly sliced
1/2 cup packed cilantro leaves, roughly chopped
Steamed rice or vermicelli noodles for serving

Instructions
1. In mixing bowl, combine garlic, ginger, turmeric, 1 tsp salt, 1/2 tsp pepper, and olive oil.  Add shrimp, mix well, and place in refrigerator until it's time to use.
2. Heat vegetable oil in large skillet over medium high heat.  Add shrimp in even layer and cook about 2 minutes.  Pour in coconut milk and soy sauce and add jalapeno, stir to combine and turn shrimp. Raise heat to high to simmer and cook until liquid thickens slightly and shrimp are about cooked through, about 3 minutes.
3. Add spinach and stir in batches until wilted.
4. Remove from heat and squeeze juice from the lime.  Top with green onions and cilantro and serve over rice or noodles.

Serves 4

Urban Hiking {Ballard Locks}


Saturday morning C and I decided to get out of the house and go for a nice long walk {can you tell we've felt cooped up all winter?}.  We headed over to Magnolia, grabbing lunch at the Fisherman's Terminal {more on that later} and wandering down through the industrial area towards the Locks where I haven't been in quite awhile.  The Locks were busy with lots of visitors and a band playing on the Ballard side and it was fun to take in the beautiful park and rose garden on such a gorgeous day.  Afterwards we strolled through Ballard, stopping at the Nordic Museum to check out the gift shop then making our way down Ballard Ave to see if we could find any good treats to cool us down {though I ultimately refrained}.  After that it was a long walk over the Ballard Bridge {it always feels never-ending} where they were already flying the 12 flag and back up the hill towards home.  A nice 8 mile loop in the sunshine was the perfect way to spend an afternoon!

PS- tomorrow is a holiday so I’m taking the rest of the week off from writing. Have a great one!
