Salmon Teriyaki & Broccolini


One of my most favorite things is a new cookbook, and adding Go To Dinners by the Barefoot Contessa to my growing collection this Christmas {thanks Mom & Dad!} has already proved incredibly valuable.  One of the very first things I made from this cookbook shortly after receiving it was this Salmon Teriyaki with Broccolini.  We make salmon and veggies for dinner almost every week but this was a fun and tasty way to switch up our typical meal.  The sauce is super easy to make with pantry ingredients and drizzled over all parts of the dish made it incredibly tasty and the perfect weeknight dinner.  We'll definitely be adding this one to our weekly "go to dinners" and you should too!

Salmon Teriyaki & Broccolini

Ingredients
Olive oil
3 Tbsp soy sauce
1 1/2 Tbsp maple syrup
2 tsp toasted sesame oil
1 Tbsp minced fresh ginger
1 Tbsp minced garlic {about 3 cloves}
1/4 tsp crushed red pepper flakes
4 skinless salmon fillets
Salt & Pepper
1 1/2 lbs broccolini, lower thirds of the stems discarded
Steamed Basmati Rice

Instructions
1. Preheat oven to 400 degrees.
2. In a small saucepan, combine 3 Tbsp olive oil, the soy sauce, maple syrup, sesame oil, ginger, garlic, and red pepper flakes.  Bring to a boil over medium heat, lower heat, and simmer for about 2 minutes.  Set aside.
3. Arrange salmon in baking dish with just a small space between them.  Sprinkle with salt & pepper and spoon the soy sauce mixture evenly over the fillets {you may not use all of it}.  Roast on upper rack for 12-15 minutes to desired doneness, depending on thickness of salmon.
4. At the same time, place broccolini on a sheet pan, drizzle with olive oil and sprinkle with salt & pepper.  Toss with your hands and spread out in a single layer.  Roast on the lower rack of the oven for about 10-12 minutes, tossing once, until crisp tender.
5. Serve salmon & broccolini with basmati rice and drizzle with remaining sauce and/or pan juices.

Targy's Tuesday


We have a new favorite neighborhood activity in these parts - Tuesday Bingo at Targy's!  Targy's is the neighborhood dive bar a few blocks away from our house that serves great local beer and a few bar bites alongside some fun bar games, neighborhood regulars, and friendly staff.  It definitely has that "Cheers" type of vibe where you become instant friends with everyone {the first time Kelsey and I went we ended up giving our numbers to our neighbor down the street, getting all the local gossip and planning a summer block party!} so when Kels asked Christian and me if we wanted to check out the free Bingo last Tuesday night we immediately said yes.  The vibe is fun yet competitive with about 4-5 games in the span of an hour, and Christian even came home with a $25 Amazon gift card for winning a game!  It was so much fun - I love a local hangout that is just easy and no pressure - and I can't wait to go back soon to try out their Trivia Night.

Shadow


On Sunday our family's sweet little Shadow went to kitty heaven.  Shadow {Shads, Shadillac, etc} was a sweet, quiet snuggle bug who loved to curl up on your lap {especially if you had a cozy blanket on you} and fall right to sleep.  She was always curious and cautious of newbies but once she loved you, you were in.  We'll miss her soft little cries and cozy cuddles, but I know she's out there somewhere snuggling up on a couch with Nina drinking cereal milk from a bowl.  We love you and miss you, Shads.

Happy {Pretty Yard} Friday!


Happy Friday!  There's been a lot going on around here but I'm excited for a quiet weekend with not a lot of plans - probably about time to get on that wedding planning!  One thing that's been keeping me busy is getting the house ready to rent out again, and I couldn't have done it without the help of my parents and Christian.  Dad came down yesterday to help me put the final touches on the yard - new mulch in all the flower beds - and after several hours of manual labor I think it's safe to say that I have the best dad ever, my yard looks awesome, and I may need to rethink that career change to landscaper :). Thanks again Dad - you are the absolute best!

Smitten Kitchen at Town Hall


My love for Smitten Kitchen recipes is well documented here {her strawberry summer cake, broccoli slaw, cauliflower tacos, and granola are all staples in this house, amongst many others} so you can imagine my delight last fall when I found out that Book Larder would be hosting Deb at Town Hall on her tour for her new cookbook, Smitten Kitchen Keepers.  The event was finally last week and I easily convinced Christian to tag along with me in promise of happy hour before and the conversation being hosted by Kenji Lopez-Alt, a favorite local author, chef, and overall food guru.  We stopped at Cortina for happy hour and had some yummy shared plates and cocktails before the event, then walked the few blocks to Town Hall where I got to pick up my signed copy of the new book.  Neither of us had been to the event space before and were in awe of how open and pretty it was - the perfect place to hold a talk like this.  Deb & Kenji were both delightful to listen to for the hour plus they were on stage talking about food, picky eaters, their recipe development process, and just funny overall stories.  It was so fun getting to listen to two of my faves in conversation and even more exciting to feel like we're finally getting back out in the world doing social things that my pre-pandemic self definitely took for granted.  I can't wait for more events to come - and to dive into this delicious looking cookbook!

Sweden {Christmas & Our Last Few Days}


Our last few days in Sweden were spent gathering souvenirs and C's favorite foods to bring back to the US, visiting with one of his best friends from childhood, and spending time at the farm looking through old photos and providing tech support to his parents.  Christmas Day was not a big deal there but we did get out for a foggy, icy walk and managed to stream a favorite Christmas episode of Friends that made me so happy :)  For our last night in Sweden Maggie cooked us moose steak for dinner then we headed off to the train station in the early morning hours of 12/28 on the long journey back to Copenhagen and eventually Seattle.  Thanks for having us, Maggie and Anders - until next time! :)
