When mom told me we were tasked with bringing dessert to Easter Sunday, I immediately thought of her Layered Lemon Dessert - my absolute favorite. I've been requesting this for my birthday dessert for years and practically any holiday between the months of March and September, so I figured Easter was the perfect excuse to make it again. It's extremely simple to put together and can be customized with endless flavor options (chocolate, pistachio, banana). I highly suggest making this for your next get together - it'll be the talk of the party :)
Ingredients
Layer 1
1 1/4 cup flour
1 1/4 cubes butter
1/2 cup chopped walnuts
Layer 2
1 cup powdered sugar
8oz cream cheese
1/2 container Cool Whip
Layer 3
1 large box (or 2 small) instant lemon pudding (or flavor of your choice)
Milk
Layer 4
1/2 container Cool Whip
1/2 cup chopped walnuts
Instructions
1. Preheat oven to 350. Cut together all ingredients for Layer 1. Press into buttered 9x13 pan and bake for 15-20 minutes, or until crust is set but not burnt. Let cool.
2. Mix together all ingredients for Layer 2. Spread on cooled crust.
3. Mix pudding and milk following instructions on box. Pour over cream cheese layer.
4. Spread remaining Cool Whip on top of pudding and top with chopped nuts. Refrigerate.

My mom has made this for years... but she used Pecans. Every time she made it, EVERYONE requested it again and again. Got to the point that she wasn't allowed to bring anything else. It's probably my favorite childhood dessert memory....
