Spicy Pulled Pork
I hosted our annual girl's Christmas party this year and decided our theme would be Fiesta de Navidad! I wanted to make something I could prep ahead of time but that would feed 9 hungry girls, so I picked The Pioneer Woman's Spicy Pulled Pork and asked everyone to bring their favorite taco toppings for a little taco bar. It was a huge success - that plate of pork was gone by the end of the night. Next time you're having a big gathering, definitely look this one up. And despite the name, it is not that spicy - just delicious :)
Spicy Pulled Pork
Ingredients
One 5-7 lb pork shoulder
1 whole onion, quartered
1 tblsp chili powder
1/2 cup brown sugar
4 garlic cloves, peeled
1 tsp dried oregano
2 tsp ground cumin
1-2 tblsp salt
Pepper
3 tblsp olive oil
2 tblsp white wine vinegar
Lime wedges and other favorite taco toppings
Tortillas
Instructions
1. Preheat oven to 300.
2. In food processor or blender, combine onion, chili powder, brown sugar, garlic, oregano, cumin, salt, pepper, olive oil, and vinegar. Pulse until totally combined.
3. Pour mixture over pork and rub into all folds and crevices. Place pork in dutch oven and add 2 cups water. Cover tightly and roast 6-7 hours, turning once every hour.
4. Once fork tender, increase heat to 425 and roast uncovered for 20 minutes to get skin crispy. Remove from oven and let sit 15 minutes.
5. Shred meat using two forks. Place on large platter, pour remaining juice over meat, and garnish with lime wedges.
6. Serve in warm tortillas with desired taco toppings.
